About Our Patron

For your delectation, there is a patron saint of corn, cornfields, and corn chandlers, St. Honoré, 7th century Bishop of Amiens. Honoré is also the patron of bakers, bakers of holy wafers, confectioners, candlemakers, chandlers, confectioners, florists, flour merchants, oil refiners, and pastry chefs.

Honoré is among the select few saints who have recipes named after them. In this case, a traditional French cake consisting of a base of páté brisée topped with a ring of cream puffs that are dipped in caramel prior to being positioned on the base. This caramel coating "glues" the puffs together. The center of the ring is then filled with Saint-Honoré cream — crème pátissière lightened with beaten egg whites or whipped cream.

Why St. Honoré? It's a bit of an inside joke. Join us, ask around, and maybe you'll find out!
